เข้าเยี่ยมชมเบื้องหลังความอร่อยของเบเกอรี่สวนดุสิต\u003Cbr>.\u003Cbr>       ได้รับเกียรติจากผศ.ดร.พิทักษ์ จันทร์เจริญ อธิการบดี มหาวิทยาลัยสวนดุสิต กล่าวต้อนรับคณะผู้ประกอบการและบรรยายถึงที่มาในการสวนดุสิตโฮมเบเกอรี่ ก่อตั้งมาตั้งแต่ปี 2529 เราเติบโตมาจากคณาจารย์ด้านคหกรรมศาสตร์ ของสวนดุสิตร่วมกันสอนและจำหน่ายขนมจากการเรียนไปสู่คนที่สนใจได้ชิม เราทำโครงการร่วมกับ ลีเวอร์บราเดอร์ เพื่อพัฒนาคนด้อยโอกาส. เพราะผู้บริหารสมัยนั้น ซึ่งเป็นนักเรียนสมัยมัธยม ระดับ VP กับ รองอธิบดี เป็นเพื่อนกันจากโรงเรียนมัธยมชื่อดัง ซึ่งถ้าสมัยนี้ก็คงเรียกว่าเป็นกิจกรรม CSR ของบริษัทนั่นเอง. เป็นเงิน 10,000 บาท เราพัฒนาคนได้ 2 รุ่น กระจายสู่ร้านเบเกอรี่ต่างๆ แถวย่านที่วงเวียนใหญ่เงินที่เหลือจากโครงการอบรม 1,298 บาท ถูกนำมาซื้ออุปกรณ์เบเกอรี่เบื้องต้น เริ่มจากขนมปังคุ๊กกี้ง่ายๆ จนกระทั่งขนมที่เลื่องชื่อได้เป็นที่รู้จักทั้งพระนคร โดยกระจายเข้ากลุ่มหน่วยงานราชการชั้นสูงต่างก็รู้จัก “ขนมทอฟฟี่เค้ก”ของสวนดุสิต นอกจากนี้เรายังมีเด็กพิการทางหูจากโรงเรียนเศรษฐเสถียรก็มาทำงานกับเราภายใต้คำแนะนำจากองค์พระอุปถัมภ์ว่าท่านเชื่อมั่นในศักยภาพของคนเหล่านี้ ดังนั้นสวนดุสิตโฮมเบเกอรี่น่าจะเป็นที่แรกๆ ที่มีคนพิการทางหูมาทำงานกับเรา ปัจจุบันมีอยู่ 3 คน ทำงานกับเรามากว่า 20 ปี ในยามปกติ เราเป็นแหล่งรองรับเด็กฝึกงานน้องๆสายอาหารทั้งจากหลักสูตรเชฟและคหกรรมศาสตร์ แต่เรามีบุคลากรทำงานเพื่อรองรับการตลาดที่ไม่สะดุด จำนวน 95 คน เป็นร้านขนมที่ดำเนินธุรกิจมีการเสียภาษีถูกต้อง และประกอบกับลูกค้าที่ยังไว้ใจและซื้อขนมอย่างต่อเนื่อง ได้อธิบายถึงสาเหตุของการเติบโตอย่างเข้มแข็งของสวนดุสิตโฮมเบเกอรี่ ในปัจจุบันมีกำลังการผลิต 5 SKU หลักประกอบด้วย\u003C\u002Fp>\u003Cul>\u003Cli>Toffee Cake 20,000 ชิ้น\u002Fวัน\u003C\u002Fli>\u003Cli>Cookies 1,000 กระป๋อง\u002Fวัน\u003Cbr>โดยสินค้า จะจัดส่งไปยังคลังสินค้าต่างๆ 4 จุด ทุกๆวันในช่วงเช้า ซึ่งถือเป็นความท้าทายต่อทีมงานของโฮมเบเกอรี่อีกด้วย การที่ต้องทำงานแข่งกับเวลานั้นถือเป็นเรื่องที่ละเอียดอ่อนและต้องให้ความใส่ใจในทุกกระบวนการไม่สามารถทำผิดพลาดได้ เพราะการผิดพลาดเพียงเล็กน้อยจะส่งผลกระทบต่อ Modern Trade แน่นอน\u003C\u002Fli>\u003C\u002Ful>\u003Cp>       ในปัจจุบันนี้มีสินค้าทอฟฟี่เค้กจากแบรนด์ต่างๆเกิดขึ้นอย่างต่อเนื่อง นับว่าเป็นผลดีต่อผู้บริโภคและทำให้ตลาดขอทอฟฟี่เค้กนั้นโตเพิ่มขึ้นอีกด้วย นอกจากนั้นแล้วเทรนสินค้าที่อยู่ในกลุ่มเดียวกันมักมีผู้ประกอบการ หรือนักลงทุนหน้าใหม่ที่อยากเข้ามาร่วมในธุรกิจประเภทนี้ แต่ติดตรงที่ว่าแนวคิดในการทำสินค้านั้นเปลี่ยนไป ไม่ได้อยากเริ่มต้นผลิตเอง อยากจะทำ OEM ออกมาในแบรนด์ตัวเองและส่งขายตาม Modern Trade แต่ในความเป็นจริงแล้วมันไม่ได้ง่ายขนาดนั้น ผู้ประกอบการหลายๆท่าน ยังไม่เข้าใจส่วนนี้มากซักเท่าไหร่ หรือบางรายมีสูตรเป็นของตัวเองแต่อยากให้ทางโฮมเบเกอรี่ผลิตให้แต่แทบไม่อยากเปิดเผยสูตรให้กับทางผู้ผลิตเลย จึงเป็นการยากที่จะทำงานร่วมกันได้ ด้วยสาเหตุนี้ จึงทำให้ทอฟฟี่เค้กมีเพียงไม่กี่แบรนด์ที่เราเห็นอยู่ในตลาดหลัก\u003C\u002Fp>\u003Cp>       ด้วยเทคโนโลยีการผลิตในปัจจุบัน ประเทศจีนสามารถทำให้ Cake, Bakery ยืดอายุของอาหารได้ตั้งแต่สามเดือนถึงหนึ่งปี ทำให้ความละเอียดของเนื้อเค้กนั้นละเอียดและนุ่มไม่ต่างจากใช้คนตี ด้วยเทคโนโลยีนี้เอง สวนดุสิตโฮมเบเกอรี่มองว่า เราควรมีอัตลักษณ์ของเราเอง ไม่ควรเข้าไปสู่ Segment ดังกล่าว เพราะมันไม่ใช่ทางของเราเลย
